Deep Fried Turkey vs. Traditional Roast Thanksgiving - November 3, 2011

Thanksgiving is right around the corner and we all  know what that means.....FOOD COMA!!! I can't wait! Now, there's is a debate out there that I thought I'd never become a part of, and that is, what is the way to prepare the turkey?

Lucky for me, I grew up with parents who did the turkey roast, glazed ham, mashed potatoes, green bean casserole, cranberry sauce and all the traditional fixings, etc.... And then, as I grew older, I wasn't around for Thanksgiving every year, so I had dinner with friends.

Lucky for me, I had befriended a few folks who really knew how to whip up some southern cooking options, and the one that will stick out in my mind forever (and thank you goes out to Bob and Nate from the sticks of Missouri for turning me onto this), is the DEEP FRIED TURKEY! The best way to prepare a turkey I have ever tasted.

Now, no offense to Mom, who can whip up a mean Thanksgiving dinner, but preparing a bird in deep-fry-mode is the most succulent, flavorful and juicy method to cook turkey that I have ever experienced.

Fortunately i am not the only one who feels this way. I came across an article by John Kessler of Food and More out of the Atlanta Journal-Constitution (again, southern influence) who couldn't agree more. The title of the article "How to Deep Fry a Turkey (and why you'll never roast again)" is a great article in not only why deep frying is superior to roasting, but HOW to correctly deep fry a turkey.

In all fairness and giving credit where credit is due, the actual author of the article is Jon Watson whose wordsmith skills will help you to understand why the deep fried edition wins over traditional roasting methods.

First off, the significantly reduced cooking time is an advantage as well as the fact that all of that turkey flavor is captured within the skin of the bird in the high heat of the oil. Also, the skin becomes thin, salty and crispy and you will lose these facets after hours of roasting and basting a turkey in an oven. I will let the author dictate the correct way to prepare the turkey, but as he mentions, be sure to take all the safety precautions into consideration before taking on the task of deep frying a turkey.

A few points that I would like to support before I turn the article over to you to enjoy, is that your turkey MUST be COMPLETELY thawed out before you drop the turkey in the fryer. Water and oil are a bad mix and any frozen/unthawed water within the turkey can cause your deep fryer to catch fire. BAD! This leads us to the second most important safety measure, and that is to COOK THIS BIRD OUTSIDE! Never attempt to deep fry this bird indoors unless you want the fire fighters to show up stat and see if they can save your house from burning to the ground. This means outside, on a patio, without an overhang.
